Hubertówka in Nowy Zamek

Hubertówka (hoo-ber-TOOF-kah) in Nowy Zamek, near the town of Milicz in Lower Silesia, is a family-run restaurant serving game and freshwater fish, right beside the Milicz Fish Ponds in the Barycz Valley. Open since 1982, it is known for Milicz carp, the region's signature fish, and for venison from the surrounding forests. If you are cycling or birdwatching around the ponds, it is the obvious place to stop for a proper Polish lunch – and it has guest rooms if you want to stay.

From a hunters' lodge to a lakeside restaurant

Hubertówka – named after St. Hubert, patron saint of hunters – opened in 1982 as a restaurant for hunters. For decades it operated from a hunting lodge in the forest near Gądkowice before moving in March 2020 to a new building in Nowy Zamek, right by the ponds. In 2021 guest rooms for 18 people opened upstairs, and two year-round cottages are available nearby. It is still a family business.

What to eat

The restaurant says around 90% of its ingredients come from the Barycz Valley, including fish, game, eggs, bread, vegetables, pickles, juices and beer. Look out for:

• Milicz carp, served several ways, including in fish soup
• other local fish such as catfish and trout
• roast venison and game pâtés
• dishes with other meats plus vegetarian options, with sides such as Silesian potato dumplings and buckwheat

Its Milicz carp dishes carry the regional Dolina Baryczy Poleca (Barycz Valley Recommends) quality mark, and the restaurant belongs to the European Regional Culinary Heritage Network. Fall is carp season, when the ponds are harvested and the region holds its Carp Days.

Prices are not published online, so ask when you book; payment is in Polish złoty (PLN). Staff mainly speak Polish, so a translation app helps with the menu.

Things to do nearby: the Milicz Ponds

The restaurant lies in the Barycz Valley Landscape Park among the Milicz Ponds, Poland's largest carp-farming area, created by Cistercian monks from the 13th century onward. There are more than 285 ponds covering about 77 sq km, and the area is one of Europe's most important wetlands for birds, protected under the Ramsar Convention: 276 bird species have been recorded, including cranes, white-tailed eagles and greylag geese. Flat dikes make for easy cycling and walking, including the route from Stawno to Nowy Zamek.

How to get there

Nowy Zamek is a small village a few kilometers from Milicz, about an hour's drive north of Wrocław, the nearest city with an international airport. A car is the easiest way to get here; cyclists will find the flat, well-marked trails of the Barycz Valley ideal.

Is it worth the trip?

If you are already exploring the Barycz Valley, yes – eating local carp where it is farmed is part of the experience. It is not a destination in itself for a day trip from Wrocław unless you combine it with the ponds.
