Museum of Toruń Gingerbread

The Museum of Toruń Gingerbread is a branch of the District Museum in Toruń (say "TOR-oon"), opened in 2015 in the former Gustav Weese gingerbread factory on ul. Strumykowa, at the edge of the UNESCO-listed Old Town. It is an interactive, multisensory museum where the air smells of spices, you see historic ovens and carved molds, and – best of all – you bake your own gingerbread. Toruń is about halfway between Warsaw and Gdańsk, and gingerbread is as much its symbol as Copernicus, who was born here.

The story behind the museum

The museum occupies converted buildings of the Weese company, one of the best-known names in Toruń gingerbread, a craft with centuries of history in the city. The red-brick factory setting helps tell how a guild craft became an industry. Note that this is the official city museum branch, not one of the private baking shows elsewhere in the Old Town.

What to see

The exhibition traces Toruń gingerbread from the Middle Ages to the 20th century:

• a collection of wooden gingerbread molds from the 17th to 20th centuries, carved with figures, coats of arms and animals;
• ovens, from a reconstructed medieval oven to a 20th-century one;
• a room of ingredients and spices;
• recreated interiors: a 19th-century parlor, kitchen and shop, plus a 20th-century shop;
• a vintage Żuk van once used to deliver gingerbread.

Baking workshops

The highlight is the hands-on workshop where you make your own gingerbread. From October to April sessions start every hour from 10 a.m. to 3 p.m. (May–September until 5 p.m.); arrive 10 minutes early. There is a separate workshop for kids aged 4–7. Places are limited, so book online. Allow about an hour for the exhibition, or 2 hours with a workshop. Is it worth it? For families and food lovers, absolutely. Tip: a shop of Toruń's Kopernik gingerbread factory is at the same address, handy for souvenirs. Workshop places are limited, so book ahead, especially for weekends.

As of October 2026, per the District Museum website:

• October 1–April 30: Tuesday–Sunday 10 a.m.–4 p.m.;
• May 1–September 30: Tuesday–Sunday 10 a.m.–6 p.m.;
• Monday: closed; last entry 30 minutes before closing.

Prices:

• exhibitions: 33 PLN, reduced 28 PLN;
• exhibitions plus baking workshop (Wednesday–Sunday): 52 PLN, reduced 46 PLN;
• Tuesdays: free entry to the exhibitions; workshop only 33/28 PLN;
• children's workshop (ages 4–7): 21 PLN.

Getting there and nearby

Ul. Strumykowa is a few minutes' walk from the Old Town Market Square and the Leaning Tower. Trains reach Toruń from Warsaw and Gdańsk in roughly 2.5–3 hours; the nearest airport is Bydgoszcz. Parking in the Old Town is limited, so walk. Combine your visit with the Copernicus House, the Town Hall and the Vistula riverfront. In 2026 the city's Gingerbread Festival runs October 2–11.
